I had a really great yoga practice tonight at Core Power and wanted to fuel my body with something really good for me. Summer is around the corner, so there’s no time to mess around. My little brother came over for dinner, so I went big!
This fresh sockeye salmon was the perfect size for two. I baked it in the oven for 20 minutes on 350 in lemon butter. On the side, steamed kale with avocado. I like to steam with a little blood orange olive oil, sea salt, and a shot of water. I also tried a new recipe for stuffed yellow squash, it was the winning dish!
