spinach pesto pasta with pine nuts and pancetta

This recipe is extremely easy. It happened to be a spontaneous dish for me, consisting of items I had laying around the house. I had previously picked up some spinach pasta from a farmer’s market, and had pesto, artichoke hearts, feta cheese, bacon and pine nuts in my kitchen. The trick to enjoying this at it’s full potential is timing. With this precise order you will yeild the best results:

  1. Pour yourself a glass of chilled white wine
  2. Spray both the water pot and frying pan with cooking spray
  3. Boil the water, heat the pan for bacon
  4. When pan is hot, cook 4 slices of bacon 4 minutes per side
  5. When water is boiled, put pasta in to cook for 8 minutes
  6. After bacon is cooked, lay out to dry on paper towels
  7. Drain pasta and begin heating pesto in pan with bacon drippings
  8. Toss handful of each, pine nuts and artichoke hearts, into the sauce
  9. Chop up bacon and add to the sauce
  10. Toss sauce and pasta with feta crumbles till thoroughly mixed
  11. Salt & pepper to taste and enjoy!
