salsa chicken two ways

There are two ways to cook… with a recipe, and without one. I was inspired by some homemade enchiladas one of our Chef’s whipped up, and decided I was lacking variety in my chicken and needed to bust out the old slow cooker to get into fall cooking mode. I headed to Trader Joe’s and picked up a few basic ingredients for a healthy, easy dinner – leftovers of which would could be reinvented into lots of different dishes.

3 skinless boneless chicken breasts

2 jars of Trader Joe’s medium salsa

2 tablespoons of diced shallots, garlic, onions

1 cup of chicken broth

1 cup of light beer

juice from one lime

salt, pepper, chili powder, turmeric and tabasco to taste

All you gotta do is throw them all into a slow cooker, turn it on low, and leave the house. I let mine cook for 8 hours. I think next time I will tweak it a bit, but this delicious shredded salsa chicken was great for yummy tacos on flourless tortillas with mexican rice, sliced avocado, black beans and more hot sauce 🙂 For my GF roommate, blue nachos with black beans and cheese.
