Green Goddess Salad Jar

Lately I have been a real bore when it comes to packing my lunches. Hummus and veggies, fruit salad and Subway have been in heavy rotation for weeks now, and I need to start getting creative again! Even though this salad is super basic (it is essentially every side garden salad you have ever eaten), using fresh veggies from the farmers market and making my own dressing has proven to be a new fave of mine.

What You’ll Need:

  • Ball Mason Jar w/ lid
  • 1/3 red bell pepper
  • 1/3 cucumber
  • handful of baby carrots, chopped
  • 1/2 tomato
  • mixed greens
  • sunflower seeds
  • olive oil
  • dijon mustard
  • tahini
  • juice from 2 lemons

Directions:

First you will want to mix your dressing. Now there are a zillion recipes for DIY dressing, but I like to make mine to taste. I used olive oil and fresh lemon juice as a base, and added dijon and tahini by the half teaspoon to ensure it didn’t get overpowered by either ingredient. (Insider tip: go light on the tahini!!) Once you have a nice taste and consistency, you can chop all your veggies. You will want to store the dressing on the very bottom, and add your veggies in order of firmness (most firm at the bottom, to avoid getting soggy from sitting in dressing). Shake to toss, and enjoy!
