For those of you who are fans of entertaining, you know how great app’s on a toothpick can be. Not only are they portion perfect, but the presentation is on point. There is no need for a special occasion to make skewers, so I will be posting recipes every few weeks featuring a different snacks on a stick, for your enjoyment. These are great for parties, or entertaining a few friends, or simply being crafty and cute in the kitchen.
A couple weeks ago, my friend had a potluck dinner party for his birthday and I wanted to bring something that would impress the host and also be an easy cleanup. I felt inspired by the local fare at the Farmer’s Market, and decided to try out something new: Watermelon Salad skewers.
Lucky for those of us that live in San Diego, it is still summer by way of weather and produce. Heirloom tomatoes and watermelons are on sale everywhere, and I picked up some fresh mint, feta cheese and balsamic glaze to spice things up. Not only was this a one dish clean up, but they were the first to go at the party.
Watermelon (pre sliced, saved me time – which I was short on)
3 medium heirloom tomatoes (I went with green and yellow to add a punch of color)
A few springs of spearmint
Crumbled feta cheese
Salt & Pepper
Pyrex 9 x 13 dish (for transporting)
Prep all your tomatoes and watermelon by dicing into 1″ cubes. Skew onto toothpick with watermelon on bottom, a mint leaf in the middle, and tomato on top. Once lined up in Pyrex dish, sprinkle with crumbled feta and drizzle with balsamic glaze. Salt & Pepper liberally, and voila! You will be the belle of the ball.
