Salad in a Jar: Taco Salad

So in my most recent recipe post, I impressed you all with a super simple DIY salsa recipe. I thought I was all types of fancy with my newest food processor creation, and as I was bragging about my salsa success with a coworker by the water cooler, another friend from work Mikki came by with the most insanely delicious looking salad EVER. So much for my thunder…

The good news is, my salsa would come in handy to complete this newly found recipe. As you know, I am a big fan of salad jars. They are the easiest way for me to pack a healthy homemade lunch and are the easiest cleanup of all time. Not to mention, who doesn’t love having mason jars around? They are so handy for salads, flowers, dry ingredient storage, pretty displays of things, candles, and the list goes on and on and on. Anyways, I took one bite of this salad and was instantly sold. I am all about salads that are choc-full-of-veggies, and I found that this one was a great way to make use of produce items I constantly have in my house.

Ingredients:

Romaine Lettuce

1/2 can Pinto beans

1/3 can Corn

1/4 can green chiles

1 tomato, quartered

1/2 avocado

diced pepper jack cheese

diced colby-jack cheese

1 tbsp homemade salsa

1 tbsp Brianna’s Rich Santa Fe Blend dressing

handful of crushed Cool Ranch Dorito’s *I subbed Flaxseed blue corn chips for these

*I also pulled some white meat of a rotisserie chicken I had in the fridge. Can also be substituted for ground turkey meat!

Layering Order:

Dressing

Salsa

Tomatoes

Beans

Corn

Chiles

Chicken

Cheese

Lettuce

*save avocado and chips for when you actually eat your salad!!

Empty, toss, and enjoy!
